We proceed to the separation of the grapes, crushing and the stowage in the wine press, where the skin maceration is made with a mechanical press, through several days.
The alcoholic fermentation is interrupted, and the wine spirit is added, followed by pressing. The wine is aged in an oak tree barrel during 42 months. After bottling, the wine ages in the bottle for 3 months.
